Qwik Hearty Dinner that the Whole Family will LOVE!

Its Monday night.  It was a long day after a great weekend and you realize you have a whole week ahead of you before enjoying another weekend.  The kids are hungry, the dog is barking, the husband is absorbing football and you are tired!  What to do for all these hungry troops?  Turkey chilidogs.  Throw in a side salad and that makes it an easy, healthy and appealing way to get everyone to the dinner table with a happy face.  Here’s how:


For a family of 4, 2 servings each

1 package Turkey hot dogs (taking the guilt out of mystery meat)

1 package whole wheat buns (again you can feel good giving wholesome nutrition)

2, 16oz cans of chili* (I like low-sodium versions.  chili is always packed with protein and fiber)

shredded cheese (you can opt for low-fat mozzarella or what’s on hand)



1lb spinach leaves (this is the super healthy staple, you can use whatever lettuce/kale/chard

or other leafy veggie you have on-hand

1 cup pomegranate arils (or dried blueberrys or craisins)

1 cup diced pears (from the can is acceptable or try an apple)

½ cup chopped pecans (again, substitute if necessary with on-hand materials: the goal is ease)

¼ cup crumbled feta (gorgonzola works too)

Honey Dijon dressing (or dressing of your choice if this isn’t popular in your family)


Start by tossing the hotdogs in a large skillet and emptying the chili in a saucepan on low heat.  Let those sizzle and heat for 5-8 minutes while prepping the salad & buns.  Dice up the pears and combine with pomegranate arils and pecans.  I like to dress the ingredients of a salad before adding the leafy parts, I think it makes it less soggy.  Add the spinach leaves, toss and sprinkle the feta on the very top.  Set aside.  Lay out the whole wheat buns on plates.  When the dogs are browned to your liking, add them to the buns, scoop warmed chili on top and add a sprinkle of shredded cheese of your choice.  Include some of the tangy salad and this is sure to please, and nourish, everyone in your family!  Enjoy!!!
*You can use your homemade chili of course if that is on hand.  Remember this recipe for a little twist on just another bowl of chili.
